Each course highlights the natural character of premium ingredients, from delicately prepared seafood to robust, slow-cooked and dry-aged meats, paired with Voyager Estate wines that showcase balance, structure, and a deep sense of terroir. The Highlights The evening begins with a KrisFlyer-exclusive amuse-bouche and a welcome wine of Voyager Estate Sparkling Chenin Blanc . The first course features Sous Vide Cobia with grilled leek and chive, accompanied by Chardonnay 2020, followed by Smoked Maple Duck Breast with orange purée, sautéed fennel, and asparagus, paired with Cabernets 2023. The experience continues with a 4-hour Braised Short Loin Rib with celeriac mash, confit baby carrot, and gremolata, complemented by Cellar Release Cabernet Sauvignon 2015. A highlight of the evening, the Dry-aged F1 Wagyu Striploin, is served with sweet peas, morel mushroom, and whisky mustard jus, paired with MJW Cabernet Sauvignon 2020. The dinner concludes on a sweet note with Grana Padano Ice Cream and vanilla biscuit, offering a refined finish to the evening.
